The peach, Prunus persica, is a deciduous tree, native to China and South Asia, where it was first cultivated. It bears an edible juicy fruit also called a peach. The species name persica refers to its widespread cultivation in Persia, whence it was transplanted to Europe. It belongs to the genus Prunus which includes the cherry and plum, in the family Rosaceae. The peach is classified with the almond in the subgenus Amygdalus, distinguished from the other subgenera by the corrugated seed shell.
Peaches and nectarines are the same species, even though they are regarded commercially as different fruits. Nectarines have smooth skin, while peaches have fuzzy skin; genetic studies suggest nectarines are produced due to a recessive allele, whereas peaches are produced from dominant allele for fuzzy skin.

Description
Prunus persica grows to 4–10 m (13–33 ft) tall and 6 in. in diameter. The leaves are lanceolate, 7–16 cm (2.8–6.3 in) long, 2–3 cm (0.79–1.2 in) broad, pinnately veined. The flowers are produced in early spring before the leaves; they are solitary or paired, 2.5–3 cm diameter, pink, with five petals. The fruit has yellow or whitish flesh, a delicate aroma, and a skin that is either velvety (peaches) or smooth (nectarines) in different cultivars. The flesh is very delicate and easily bruised in some cultivars, but is fairly firm in some commercial varieties, especially when green. The single, large seed is red-brown, oval shaped, approximately 1.3–2 cm long, and is surrounded by a wood-like husk. Peaches, along with cherries, plums and apricots, are stone fruits (drupes). There are various heirloom varieties, including the Indian peach, which arrives in the latter part of the summer.

Etymology
The scientific name persica, along with the word "peach" itself and its cognates in many European languages, derives from an early European belief that peaches were native to Persia. The Ancient Romans referred to the peach as malum persicum "Persian apple", later becoming French pĂȘche, hence the English "peach".
Cultivated peaches are divided into clingstones and freestones, depending on whether the flesh sticks to the stone or not; both can have either white or yellow flesh. Peaches with white flesh typically are very sweet with little acidity, while yellow-fleshed peaches typically have an acidic tang coupled with sweetness, though this also varies greatly. Both colours often have some red on their skin. Low-acid white-fleshed peaches are the most popular kinds in China, Japan, and neighbouring Asian countries, while Europeans and North Americans have historically favoured the acidic, yellow-fleshed kinds.

History
Although its botanical name Prunus persica refers to Persia (present Iran) from where it came to Europe, genetic studies suggest peaches originated in China,where they have been cultivated since the early days of Chinese culture, circa 2000 BCE.Peaches were mentioned in Chinese writings as far back as the 10th century BCE and were a favoured fruit of kings and emperors. As of late, the history of cultivation of peaches in China has been extensively reviewed citing numerous original manuscripts dating back to 1100 BCE.\
The peach was brought to India and Western Asia in ancient times.[9] Peach cultivation also went from China, through Persia, and reached Greece by 300 BCE.Alexander the Great introduced the fruit into Europe after he conquered the Persians.Peaches were well known to the Romans in first century AD, and was cultivated widely in Emilia-Romagna. Peach tree is portrayed in the domuswall paintings of the towns destroyed by the Vesuvius eruption of 79 AD, with the oldest artistic representations of peach fruit, discovered so far, are in the two fragments of wall paintings, dated back to the 1st century AD, in Herculaneum, now preserved in the National Archaeological Museum in Naples.
Peach was brought to the Americas by Spanish explorers in the 16th century, and eventually made it to England and France in the 17th century, where it was a prized and expensive treat. The horticulturist George Minifie supposedly brought the first peaches from England to its North American colonies in the early 17th century, planting them at his Estate of Buckland in Virginia.Although Thomas Jefferson had peach trees at Monticello, United States farmers did not begin commercial production until the 19th century in Maryland, Delaware, Georgia and finally Virginia.
In April 2010, an International Consortium, The International Peach Genome Initiative (IPGI), that include researchers from USA, Italy, Chile, Spain and France announced they had sequenced the peach tree genome (doubled haploid Lovell).

Cultivation
Peaches grow very well in a fairly limited range, since they have a chilling requirement that low altitude tropical areas cannot satisfy. In tropical and equatorial latitudes, such as Ecuador, Colombia, Ethiopia, India and Nepal, they grow at higher altitudes that can satisfy the chilling requirement.The trees themselves can usually tolerate temperatures to around -26 to -30 °C (-15 to -22 °F), although the following season's flower buds are usually killed at these temperatures, leading to no crop that summer. Flower bud kill begins to occur between -15 and -25 °C (5 and -13 °F), depending on the cultivar (some are more cold-tolerant than others) and the timing of the cold, with the buds becoming less cold tolerant in late winter.
Typical peach cultivars begin bearing fruit in their third year and have a lifespan of about 12 years. Most cultivars require between 600 and 1,000 hours of chilling; cultivars with chilling requirements of 250 hours (10 days) or less have been developed enabling peach production in warmer climates. During the chilling period, key chemical reactions occur before the plant begins to grow again. Once the chilling period is met, the plant enters the so-called quiescence period, the second type of dormancy. During quiescence, buds break and grow when sufficient warm weather favorable to growth is accumulated. Quiescence is the phase of dormancy between satisfaction of the chilling requirement and the beginning of growth.
Certain cultivars are more tender, and others can tolerate a few degrees colder. In addition, intense summer heat is required to mature the crop, with mean temperatures of the hottest month between 20 and 30 °C (68 and 86 °F). Another problematic issue in many peach-growing areas is spring frost. The trees tend to flower fairly early in spring. The blooms often can be damaged or killed by freezes; typically, if temperatures drop below about −4 °C (25 °F), most flowers will be killed. However, if the flowers are not fully open, they can tolerate a few degrees colder.

Cultivars
There are hundreds of peach and nectarine cultivars. These are classified into two categories—the freestones and the clingstones. Freestones are those for whom the fruit flesh separates readily from the pit. Clingstones are those for whom the flesh clings tightly to the pit. Some cultivars are partially freestone and clingstone, and these are called semi-free. Freestone types are preferred for eating fresh, while clingstone for canning. The fruit flesh may be creamy white or deep yellow; the hue and shade of the color depends on the cultivar.
Peach breeding has favored cultivars with more firmness, more red color, and shorter fuzz on fruit surface. These characteristics ease shipping and supermarket sales by improving eye appeal. However, this selection process has not necessarily led to increased flavor. Peaches have short shelf life, so commercial growers typically plant a mix of different cultivars in order to have fruit to ship all season long.

Planting
Most peach trees sold by nurseries are cultivars budded or grafted onto a suitable rootstock. This is done to improve predictability of the fruit quality.
Peach trees need full sun, and a layout that allows good natural air flow to assist the thermal environment for the tree. Peaches are planted in early winter. During the growth season, peach trees need a regular and reliable supply of water, with higher amounts just before harvest.
Peaches need nitrogen rich fertilizers, more than other fruit trees. Without regular fertilizer supply, peach tree leaves start turning yellow or exhibit stunted growth. Blood meal, bone meal, and calcium ammonium nitrate are suitable fertilizers.
The number of flowers on a peach tree are typically thinned out, because if full number of peaches mature on a branch, they are under-sized and lacking in flavor. Fruits are thinned midway in the season by commercial growers. Fresh peaches are easily bruised, and do not store well. They are most flavorful when they ripen on the tree and eaten the day of harvest.
The peach tree can be grown in an espalier shape. The Baldassari palmette is a palmette design created around 1950 used primarily for training peaches. In walled gardens constructed from stone or brick, which absorb and retain solar heat and then slowly release it, raising the temperature against the wall, peaches can be grown as espaliers against south-facing walls as far north as southeast Great Britain and southern Ireland.

Storage
Peaches and nectarines are best stored at temperatures of 0°C (32°F) and high-humidity.They are highly perishable, and typically consumed or canned within two weeks of harvest.
Peaches are climacteric fruits and continue to ripen after being picked from the tree.

Peacherines
Peacherine is claimed to be a cross between a peach and a nectarine, and are marketed in Australia and New Zealand. The fruit is intermediate in appearance between a peach and a nectarine, large and brightly colored like a red peach. The flesh of the fruit is usually yellow but white varieties also exist. The Koanga Institute lists varieties that ripen in the Southern hemisphere in February and March.
In 1909, Pacific Monthly mentioned peacherines in a news bulletin for California. Louise Pound, in 1920, claimed the term peacherine is an example of language stunt.

The blackberry is an edible fruit produced by many species in the Rubus genus in the Rosaceae family, hybrids among these species within the Rubus subgenus, as well as hybrids between the Rubus and Idaeobatus subgenera. What distinguishes blackberries from its raspberry relatives is whether the torus (receptacle) picks with the fruit, a blackberry, or remains on the plant when picked leaving a hole in the fruit, a raspberry. The term 'bramble', a word meaning any impenetrable scrub, has traditionally been applied specifically to the blackberry or its products,though in the United States it applies to all members of the Rubus genus. In the western US, the term caneberry is used to refer to blackberries and raspberries as a group rather than the term bramble.
The (usually) black fruit is not a true berry; botanically it is termed an aggregate fruit, composed of small drupelets. It is a widespread and well-known group of over 375 species, many of which are closely related apomictic microspecies native throughout the temperate Northern Hemisphere and South America.
Growth and anatomical description
Blackberries are perennial plants which typically bear biennial stems ("canes") from the perennial root system.
In its first year, a new stem, the primocane, grows vigorously to its full length of 3–6 m (in some cases, up to 9 m), arching or trailing along the ground and bearing large palmately compound leaves with five or seven leaflets; it does not produce any flowers. In its second year, the cane becomes a floricane and the stem does not grow longer, but the lateral buds break to produce flowering laterals (which have smaller leaves with three or five leaflets).First and second year shoots usually have numerous short curved very sharp prickles that are often erroneously called thorns. These prickles can tear through denim with ease, and make the plant very difficult to navigate around. Prickle-free cultivars have been developed. Recently the University of Arkansas has developed primocane fruiting blackberries that grow and flower on first year growth much as the primocane-fruiting (also called fall bearing or everbearing) red raspberries do.
Unmanaged mature plants form a tangle of dense arching stems, the branches rooting from the node tip on many species when they reach the ground. Vigorous and growing rapidly in woods, scrub, hillsides and hedgerows, blackberry shrubs tolerate poor soils, readily colonizing wasteland, ditches and vacant lots.
Ecology
Blackberry leaves are food for certain caterpillars; some grazing mammals, especially deer, are also very fond of the leaves. Caterpillars of the concealer moth Alabonia geoffrella have been found feeding inside dead blackberry shoots. When mature, the berries are eaten and their seeds dispersed by several mammals, such as the red fox and the Eurasian badger, as well as by small birds
Blackberries grow wild throughout all parts of the United Kingdom and Ireland. They are an important element in the ecology of those countries. Harvesting the berries is a popular pastime in these countries. However, it is also considered an invasive weed, sending down its strong suckering roots amongst garden hedges and shrubs. In some parts of the world, such as in Australia, Chile, New Zealand and the Pacific Northwest of North America, some blackberry species, particularly Rubus armeniacus (syn. R. procerus, 'Himalaya') and Rubus laciniatus ('Evergreen'), are naturalised and considered an invasive species and a serious weed.
Food
The soft fruit is popular for use in desserts, jams, seedless jelly and sometimes wine. It is often mixed with apples for pies and crumbles. Black berries are also used to produce candy.
Health benefits
Blackberries have a high abundance of healthy antioxidants and nutrients such as anthocyanins, salicylic acid, ellagic acid, and fiber. Recent research on berries has shifted focus away from antioxidants as there is ample evidence that the antioxidants in berries do not get into the bloodstream and act as radical scavengers. However, there is evidence that they are important in cardiovascular health. Anthocyanins are antioxidants found in blackberries that are responsible for giving blackberries their rich and dark color. This concentrated pigment of blackberries is acknowledged with decreasing the rate at which the memory deteriorates.
Blackberries contain a compound called salicylic acid.[7] This compound found in blackberries has been used for centuries for its medicinal qualities. Salicylic acid has been proven to numb bodily pains and treat unusually high body temperature, or fevers.Salicylic acid may have similar properties to aspirin that aid in protecting the body against heart disease.
Arguably, the most beneficial property of the blackberry is its profusion of ellagic acid. Ellagic acid is a phytochemical, meaning it is only found in certain plants. In experimental studies, ellagic acid is used to treat tumors in mice; the result being ellagic acid is reliable for causing the death of particular cancer cells.Researchers believe that ellagic acid may also work to reduce the harmful effects of estrogen that create breast cancer cells.

Blackberries have both soluble and insoluble fiber. One cup of blackberries (144 g) has an average of 7.6 g of fibre and contain half the daily recommended dose of vitamin C, which protects the immune system and can lower the risk of developing certain cancers. Fiber is important in maintaining a healthy digestive system as it pushes toxins and other excess waste through the intestines and supports healthy and conventional bowel movements.One of the soluble fibres found within blackberries is pectin. Pectin helps lower harmful cholesterol levels which lowers ones’ chances of heart disease.

Growth

The pecan tree is a large deciduous tree, growing to 20–40 m (66–130 ft) in height, rarely to 44 m (144 ft);taller trees to 50–55 m (160–180 ft) have been claimed but not verified. It typically has a spread of 12–23 m (39–75 ft) with a trunk up to 2 m (6.6 ft) diameter. A 10-year-old sapling will stand about 5 m (16 ft) tall. The leaves are alternate, 30–45 cm (12–18 in) long, and pinnate with 9–17 leaflets, each leaflet 5–12 cm (2.0–4.7 in) long and 2–6 cm (0.79–2.4 in) broad. The flowers are wind-pollinated, and monoecious, with staminate and pistillate catkins on the same tree; the male catkins are pendulous, up to 18 cm (7.1 in) long; the female catkins are small, with three to six flowers clustered together.
A pecan, like the fruit of all other members of the hickory genus, is not truly a nut, but is technically a drupe, a fruit with a single stone or pit, surrounded by a husk. The husks are produced from the exocarp tissue of the flower, while the part known as the nut develops from the endocarp and contains the seed. The husk itself is aeneous, oval to oblong, 2.6–6 cm (1.0–2.4 in) long and 1.5–3 cm (0.59–1.2 in) broad. The outer husk is 3–4 mm (0.12–0.16 in) thick, starts out green and turns brown at maturity, at which time it splits off in four sections to release the thin-shelled nut.

The seeds of the pecan are edible, with a rich, buttery flavor. They can be eaten fresh or used in cooking, particularly in sweet desserts, but also in some savory dishes. One of the most common desserts with the pecan as a central ingredient is the pecan pie, a traditional southern U.S. recipe. Pecans are also a major ingredient in praline candy, most often associated with New Orleans.

In addition to the pecan seed, the wood is also used in making furniture and wood flooring, as well as flavoring fuel for smoking meats.
Cultivation 
Pecans were one of the most recently domesticated major crops. Although wild pecans were well-known among the colonial Americans as a delicacy, the commercial growing of pecans in the United States did not begin until the 1880s.Today, the U.S. produces between 80% and 95% of the world's pecans, with an annual crop of 150–200 thousand tons from more than 10 million trees.The nut harvest for growers is typically around mid-October. Historically, the leading pecan-producing state in the U.S. has been Georgia, followed by Texas, New Mexico and Oklahoma; they are also grown in Arkansas, Kansas, Missouri, Arizona, South Carolina and Hawaii. Outside the United States, pecans are grown in Australia, Brazil, China, Israel, Mexico, Peru and South Africa. They can be grown approximately from USDA hardiness zones 5 to 9, provided summers are also hot and humid.
Pecan trees may live and bear edible seeds for more than 300 years. They are mostly self-incompatible, because most cultivars, being clones derived from wild trees, show incomplete dichogamy. Generally, two or more trees of different cultivars must be present to pollinate each other.
Choosing cultivars can be a complex practice, based on the Alternate Bearing Index and their period of pollinating. Commercial planters are most concerned with the Alternate Bearing Index, which describes a cultivar's likelihood to bear on an alternating years (index of 1.0 signifies highest likelihood of bearing little to nothing every other year).The period of pollination groups all cultivars into two families: those that shed pollen before they can receive pollen (protandrous), and those that shed pollen after becoming receptive to pollen (protogynous). Planting cultivars from both families within 250 feet is recommended for proper pollination.
Diseases
In the southeastern United States, nickel deficiency in C. Illinoinensis produces a disorder called mouse-ear in trees fertilized with urea.An enzyme within the leaves uses nickel during the conversion of urea to ammonia, and a deficiency results in the toxic accumulation of urea. Symptoms of mouse-ear include rounded or blunt leaflet tips which produces smaller leaflets, dwarfing of tree organs, poorly developed root systems, rosetting, delayed bud break, loss of apical dominance, and necrosis of leaflet tips. Mouse-ear can be treated with foliar sprays of nickel.

A similar condition results from a zinc deficiency, which also can be treated by foliar sprays.
Nutrition 
Pecans are a good source of protein and unsaturated fats. Like walnuts (which pecans resemble), pecans are rich in omega-6 fatty acids, although pecans contain about half as much omega-6 as walnuts.
A diet rich in seeds can lower the risk of gallstones in women.The antioxidants and plant sterols found in pecans reduce high cholesterol by reducing the "bad" LDL cholesterol levels.
Clinical research published in the Journal of Nutrition (September 2001) found that eating about a handful of pecans each day may help lower cholesterol levels similar to what is often seen with cholesterol-lowering medications.Research conducted at the University of Georgia has also confirmed that pecans contain plant sterols, which are known for their cholesterol-lowering ability.Pecans may also play a role in neurological health. Eating pecans daily may delay age-related muscle nerve degeneration, according to a study conducted at the University of Massachusetts and published in Current Topics in Nutraceutical Research

Evolutionary development 
The pecan, Carya illinoinensis, is a member of the Juglandaceae family. Juglandaceae are represented worldwide by between seven and 10 extant genera and more than 60 species. Most of these species are concentrated in the Northern Hemisphere of the New World, but can be found on every continent except for Antarctica. The first fossil examples of the family appear during the Cretaceous. Differentiation between the subfamilies of Engelhardioideae and Juglandioideae occurred during the early Paleogene, about 64 million years ago. Extant examples of Engelharioideae are generally tropical and evergreen, while those of Juglandioideae are deciduous and found in more temperate zones. The second major step in the development of the pecan was a change from wind-dispersed fruits to animal dispersion. This dispersal strategy coincides with the development of a husk around the fruit and a drastic change in the relative concentrations of fatty acids. The ratio of oleic to linoleic acids are inverted between wind- and animal-dispersed seeds.Further differentiation from other species of Juglandaceae occurred about 44 million years ago during the Eocene. The fruits of the pecan genus Carya differ from those of the walnut genus Juglans only in the formation of the husk of the fruit. The husks of walnuts develop from the bracts, bracteoles, and sepals, or sepals only. The husks of pecans develop from the bracts and the bracteoles only.
History
Before European settlement, pecans were widely consumed and traded by Native Americans. As a food source, pecans are a natural choice for preagricultural society. They can provide two to five times more calories per unit weight than wild game, and require no preparation. As a wild forage, the fruit of the previous growing season is commonly still edible when found on the ground. Hollow tree trunks, found in abundance in pecan stands, offer ideal storage of pecans by humans and squirrels alike.

Pecans first became known to Europeans in the 16th century. The first Europeans to come into contact with pecans were Spanish explorers in what is now Mexico, Texas, and Louisiana. The genus Carya does not exist in the Old World. Because of their familiarity with the genus Juglans, these early explorers referred to the nuts as nogales and nueces, the Spanish terms for "walnut trees" and "fruit of the walnut." They noted the particularly thin shell and acorn-like shape of the fruit, indicating they were indeed referring to pecans.The Spaniards took the pecan into Europe, Asia, and Africa beginning in the 16th century. In 1792, William Bartram reported in his botanical book, Travels, a nut tree, Juglans exalata that some botanists today argue was the American pecan tree, but others argue was hickory, Carya ovata. Pecan trees are native to the United States, and writing about the pecan tree goes back to the nation's founders. Thomas Jefferson planted pecan trees, Carya illinoinensis (Illinois nuts), in his nut orchard at his home, Monticello, in Virginia. George Washington reported in his journal that Thomas Jefferson gave him "Illinois nuts", pecans, which George Washington then grew at Mount Vernon, his Virginia home.
Breeding and breeding programs
Active breeding and selection programs are carried out by USDA-ARS with growing locations at Brownwood and College Station, Texas. While selection work has been done since the late 1800s, most acreage of pecans grown today is of older cultivars, such as 'Stuart', 'Schley', 'Desirable', with known flaws but also with known production potential. The long cycle time for pecan trees plus financial considerations dictate that new varieties go through an extensive vetting process before being widely planted. Numerous examples of varieties produce well in Texas, but fail in the Southeastern U.S. due to increased disease pressure. Selection programs are ongoing at the state level, with Alabama, Arkansas, Georgia, Kansas, Florida, Missouri and others having trial plantings.

Varieties that are adapted from the southern tier of states up through some parts of Iowa and even into southern Canada are available from nurseries. Production potential drops significantly when planted further north than Tennessee. Most breeding efforts for northern-adapted varieties have not been on a large enough scale to significantly affect production. Varieties that are available and adapted (e.g., 'Major', 'Martzahn', 'Witte', 'Greenriver', and 'Posey') in zones 6 and farther north are almost entirely selections from wild stands. A northern-adapted variety must be grafted onto a northern rootstock to avoid freeze damage.

The pecan is a 32-chromosome species, and can hybridize with other 32-chromosome members of the Carya genus, such as Carya ovata, Carya laciniosa, and Carya cordiformis. Most such hybrids are unproductive, though a few second-generation hybrids have potential for producing hickory-flavored nuts with pecan nut structure. Such hybrids are referred to as "hicans" to indicate their hybrid origin.
Symbolism 
In 1906, Texas Governor James Stephen Hogg asked that a pecan tree be planted at his grave instead of a traditional headstone, requesting that the seeds be distributed throughout the state to make Texas a "Land of Trees".His wish was carried out and this brought more attention to pecan trees. In 1919, the 36th Texas Legislature made the pecan tree the state tree of Texas.

In Groves, Texas, the Texas Pecan Festival is celebrated every year. There is also an annual Pecan Festival in Colfax, Louisiana in the month of November. The North Carolina pecan harvest festival in Whiteville, NC is typically held on the first week of November. The town of Hickman, in western Kentucky, holds a pecan festival in September. The area is especially known for its wild seedling pecans.
